Doctor This Recipie: Family Style Meatloaf

You know the way this works. Go for it.

Serves 4 - 6

2 cups fresh breadcrumbs
3/4 cup minced onion
1/4 cup minced green pepper
1/2 cup sliced mushrooms
2 eggs, beaten
1 pound ground chuck
1/2 pound ground veal
1/2 pound ground pork shoulder
2 tablespoons grated horseradish or prepared horseradish
2 1/2 teaspoons salt
pepper, to taste
1 tsp dijon mustard
1/4 cup milk
3/4 cup ketchup
2-3 slices bacon

Preheat oven to 400 degrees.
In a large bowl thoroughly combine all ingredients reserving 1/2 cup ketchup and bacon. Grease 9x5 baking loaf pan. Gently shape meat mixture into pan. Cover with slices of bacon and brush with remaining ketchup. Bake for 50 minutes. Cool for 15 minutes, remove from pan and slice. Makes great sandwiches the next day.

Serve with Yukon Gold potatoes boiled, riced, and mashed. Add half and half, butter and salt & pepper. Fresh peas - cooked al dente.

no mushrooms .... substitue ground deer in for the ground crap ... I mean chuck, veal, and pork sholder ... add 4 hard boiled eggs ... add "old bay" seasoning ... no milk ... beer instead ... no ketchup ... use tomato paste .... then you got the startings of a good meantloaf.

I made meatloaf the other day and stuffed it with a mixture of raw egg, feta cheese and spinach. Mmmm mmm!

I'm gonna say cut the Ketchup, replace with chili sauce (not the asian kind but the kind that tastes like really really really good ketchup) and throughout the ground beef etc have a few cloves of garlic mixed in. the garlic must not be crunchy when it's finished so there may be a need to roast the garlic a bit ahead of time.

I might even take out the mushrooms and green peppers and replace the peppers with jalapeno peppers and mix in some cubed medium cheddar and put salsa on top. My choice in salsa would probably be Arriba's Fire Roasted Garlic Cilantro. the Dijon Mustard could also be replaced with something chipotle.

Maybe even throw in some chili power and paprika too.

oh and just a little bit of cumin.
