Dogfish Head Brewery in Delaware (folks I know, actually) makes three signature IPA's (India Pale Ales) that are continually hopped (a bittering agent added to balance the malty sweetness in beer) for 60, 90 or 120 minutes after the boil in a device called a hop back.
Hops contain an bitter oil referred to as alpha acid, and each hop has a different alpha acid percentage. (Most American hops are higher than their European counterparts.) The Inda Pale Ale was developed during the British occupatio in India. The Brits found that their beer wasn't able to make the long trek to India without spoiling, so they brewed a beer that was both higher in alcohol (to be more sterile) and higher in Alpha Acid content (because it was a natural anti-bacterial agent). The result is a very bitter, but very yummy ale that became wildly popular and remains so today.
During the American craft brewing revolution, brewers in the States took their own interpretation of this style to new heights, creating what is known as an American Pale Ale, which uses American hops which are stronger to create ridiculously hoppy beers. Dogfish is one of the most widely recognized breweries that does this, but others include Sierra Nevada and their delicious Pale Ale. Dogfish head markets their 60 minute IPA with tee shirts that say 60 minute man, hence, my joke.![]()

That 90 Minute is good stuff! I expected it to have more "bite" than the 60 Minute variety, but it's actually smoother and goes down easy. I was tempted to buy the 90 Minute last night, but all I had was $10 in my pocket and with the 60 Minute you get two more beers for the same price. I really didn't feel like charging $9. I have not tried the 120 Minute. I saw it in a store a couple months ago but didn't want to pony up the $8 for one bottle.Originally Posted by Saison

I must say that in order to match the amount of hops in 120 minutes of continual hopping, there's a huge malt profile. It's a big big beer that's not for everyone. I find I like it better after it's had a few years in the bottle to mellow out. DFH makes some crazy beers...
