    Good for you.Mine are still sittign here on the floor ,but I did can some frozen roast beef yesterday,made beef stew except carrots,I was out 'canned them all,haha.

    i DID CARROTS ,NOW TIME FOR SWETS POTATOES.whoops caps.It is easier than you think.More you do it the more you'll like it.

    We have about 50 qt.s of white potatoes put up,ate most of them.

    Keep your jars in a cool dark area if possible.The storage environment has lots to do with how long,but at least 5 years,except meat they say no more than a year or two.

    What kind of canner did you get?

    Qweeny,did you can those potatos? How did they turn out?

    Our canned meat is delicious! We have used about 1/3nd of it so far this year. One can will make 6 or 8 meals for two if you use it in soups and pot pies.It really neat to open a few jars of your own canned food and put it in recipes.

    We made some really good chili and some bar b q's from this meat too.And spagetti.

    Still no jelly or preserves yet,I'd rather do the preserves ,less sugar.We have a strawberry patch here ,pick your own but it seems expensive to me.Guess no more than store brands.

    You will like doing it too,its easier than it sounds.

    We used Mirror for till we wore it out canning the meat,it swelled a bubble on its bottom,threw that away,we let it dry out and it cooked for 90minutes!

    If you think you will use it,get a good canner that will can 14 quarts at a time.American is really nice,never have to change rubber gaskits ,it screws on ,no gaskets at all.

    My friend is really into it,her and a couple others in Ga.They buy 50 to 100 lb.s of chicken to can.Always canning something.

    We always take off the rings 'after 24 hours'.We reuse the,but not the lids of course.

    I just put 2 qt.s of carrots in my big pot of soup.

    Almost time for harvest here in the south,be glad when its ours instead of someone elses.I hope to have enough to can of ours this year.

    Spring is sooooooooo busy around here now. Will be canning soon though so stay turned all you stalkers who don't post.
