I made this for dinner tonight and it was really fantastic. Fairly simple to make, very healthy, and tastes great.
From prep to cleanup it was about 45 minutes, but a lot of the time was just waiting for things to cook.
If you like quinoa and are trying to find creative ways to cook with it, I"d highly recommend this dish.

I am completely obsessed with kale lately. I combined Manu's recipe with this one.

I've also found that kale must be roasted in the oven (not boiled)... about 15 minutes with olive oil, basalmic, salt, pepper.
So roast sweet potatoes, kale, onions, almonds. Add in sharp cheddar or parmesan, dried cranberries, toss with olive oil and basalmic.
Do you eat kale? I thought it was just a decoration.

Yes you eat kale. I realize it isn't bacon or a steak but it's supposed to be very good for you.

I also love quinoa.
Also if you can find them at your health food store, goji berries are terrific to add to salads and cereal. They are great energy boosters and are very healthy.
