I've probably tried 50 different ways to roast a chicken over the years with varying degrees of success. I used this recipe the other day and it was hands down the best bird ever...
1 3&1/2 lb chicken
1 lemon
4 cloves garlic
1 onion
5 sprigs fresh thyme
soft butter
sage
salt & pepper
Preheat oven to 400*F.
Allow the bird and the butter to come to room temp. Rinse chicken inside and out with cold water and pat dry with paper towel. Sprinkle the cavity with sage, salt and pepper. Pierce the lemon several times with a fork and shove it in the cavity along with garlic and thyme. Rub the outside with soft butter and season with more salt and pepper. Cut the onion into 1/4 inch half moons and line the bottom of a shallow roasting pan. Place the chicken on top of the onions and bake for 1 & 1/4 hours (it may take slightly longer depending on your oven).
I won't get into the gravy making since everyone has their own method but if you want some tips feel free to ask.

Dude clean your oven.
Sadly my turkey skills are zilch. I usually just cook for myself so a big bird would be massive overkill.
With you on the turkey sandwich thing though.
