Alas, 'twas leftovers tonight. I shared with the dude across the hall. At least I had a dinner companion with good conversation.

Last night was baby back ribs, crab cakes, cucumber salad and fries cooked a la DngrMse.

Last night, cheddar cheese soup. It's yummy, but not what you'd consider good for you.

    6 Tbsp Butter
    6 Tbsp flour
2 cups shredded sharp cheddar cheese
    3 cups chicken broth
    3 cups light cream
    2 onions diced

Sautee onions in butter until they just start to carmelize. Add flour, and cook over medium heat until mixture turns a light brown.

Add broth and cream. cook over medium heat, stirring frequently until it all begins to thicken.

Add cheese. Stir until the cheese is melted.

Serve. Garnish with chopped green onions. Add your fave croutons, or bread.

I bought enough ingredients for two batches. The second batch will be Broccoli Cheddar Cheese soup. Accomplished by adding a bit more chicken broth, and a package of frozen chopped broccoli. Half of which is put through a blender with the additional cup of broth.

Follow the directions for the regular soup, and add the blended and chopped broccoli, stir well, cook over medium until broccoli is tender.

    I'll be making that tonight.

A hoagie/sub/grinder/whatever with turkey, lettuce, tomato, red onion, pepperoncini, buffalo sauce and blue cheese from the convenience store deli. Was quite good.

Cooler my ass. It was 100 degrees here today. Tilipia with summer veggies baked in tin foil. I made it last night so there were leftovers that had to eaten before it got caca. I almost forgot to eat.

    Lettuce wraps for tomorrow.

I have a fridge full of fresh veggies that I don't want to go bad. It's going to have to be a very diverse salad or veggie pasta for dinner. I even have organic shallots to use up. How the hell did I end up with organic shallots?

Had guests over last night. Fired up the grill:
    • corn on the cob
    • asparagus with garlic, pepper, & olive oil
    • salmon filet
    • marinated calamari steaks
    • grilled pineapple for dessert
    Turned out great!
