I need some ideas on how to cook with them. You don't need you to post up recipes...just give me some basic ideas on what I can cook with them.

I bought a bag of assorted hot peppers in Costco. Cost me like $6 for a dozen or so peppers. I made some turkey burgers and mixed an orange habanero into the meat. I tasted the pepper prior to cooking and HOLY SHIT was it hot. I think grilling it though killed the heat of the pepper. :( :shakefist

Thanks for any help.

Roasting will certainly mellow the flavors and the heat, as will removing the seeds and the ribs from the pepper.

Pair milder peppers with milder meat, ie: fish and fowl with poblanos or banana peppers while more robust peppers will need beef or sausage. Try doing a quasi-italian thing with onions and peppers with sausages.

what kinda peppers and how big are they. if they are big enough for the grill that's awesome. stuffing with cheese and/or meat is also awesome. grilling them

edit to add, wrap them in bacon. that's always a good idea. something else you can do is take some boneless skinless chicken thighs, cut up the peppers into small enough pieces that you can wrap the chicken around the pepper pieces and then wrap in bacon and stick a toothpick or skewer through to hold it all together and then throw it on the grill.

I use hot peppers as seasoning in place of cayenne/red pepper powder or in place of hot sauce. Dice them really tiny and add to any recipe that you'd use a little heat in.

They are long and skinny like chili peppers. They are yellow, orange, red, green and dark green. The package says the dark green ones are the hottest. They are too skinny to be stuffed with anything.

ok, cut them in pieces about an inch long and wrap them in chicken and then wrap that in bacon. :nice:

Try doing a quasi-italian thing with onions and peppers with sausages.

I did this last night. I made a pasta primavera type dish with yellow and green zucchini, tomatoes, a couple of the peppers, turkey sausage, garlic, onion, some spices, olive oil and pasta. I didn't really taste the heat of hot peppers, even when picking a couple of pieces out and eating them by themselves. My wife said they were very hot. It's obvious my tolerance is increasing.

That sounds fabulous; I made a run to the farmer's market this morning and stocked up on veggies. Perhaps I'll go to the market for sausage and penne and do up some pasta for dinner tonight.:nice:

I second the pasta. I mixed in some hot pepper with the garlic & herb spaghetti sauce, and was pleasantly surprised.
