Saison 06-23-2008, 10:47 AM So, my in-laws are coming to visit this weekend. I'm going to make lunch. My brother in law is bringing his awesome gf, but she doesn't eat meat. Looking for easy veggie recipes that will be a good lunch entree. I'm making a casserole for the carnivores. I'm toying with the ideas of doing pizzas, but want some other stuff so she's got some options. Any ideas?
Bear Stories 06-23-2008, 10:53 AM If she's not a vegan, you might do quiche, (it can bake with the casserole), or perhaps some yummy grilled veggies with black beans and tortillas.

Cook Quorn Pattie. Take quorn pattie and slice them into long angular slivers. Put in Flour Tortilla with lettuce/tomato/cheese/choice of toppings. Ranch/Honey Mustard/etc.

Tally 06-24-2008, 12:12 AM Any mexican recipe is easy because you can substitute refried beans or black beans where there would be meat. Also perhaps eggplant parm (can bake along side your casserole) or veggie stir fry over rice, or any number of meat dishes with the meat just replaced with tofu?

Any mexican recipe is easy because you can substitute refried beans or black beans where there would be meat. Also perhaps eggplant parm (can bake along side your casserole) or veggie stir fry over rice, or any number of meat dishes with the meat just replaced with tofu?

i agree with the grilled veggies.
make sure you get eggplant, vegetairians usually like those. you could even slice them in half, grill, take off teh skin, fill halfs with something tasty like tomato garlic, even cheese.

Tally 06-25-2008, 02:17 AM One of my favorite grilled vegetarian dishes are stuffed tomatoes! Those big Beefsteak tomatoes hollowed out and then stuffed with something yummy. I've had southwest type ones stuffed with black beans and rice and peppers and onions and southwest seasonings, I've had ones stuffed with croûtons, fresh basil, mozzarella and italian spices (highly recommended!) You can put anything in there you want. Because they are so big and are stuffed with so much stuff they lend themselves well to a main dish.

does she eat eggs? if not there are eggless pasta around so maybe you can make her a nice summertime pasta salad with soya sprouts, corn, sliced mushrooms, thinly sliced red pepper (sweet variety) you then drees the salad with a mixture of balsamic vinegar with a hint of olive oil and sea salt and sprinkle the top with freshly chopped parsley.
You can also add some mozarella.

Saison 06-30-2008, 02:55 PM So, although I had a whole thread of genius ideas, I only had time (and budget) to make my famous stove top casserole: Baby bellas, sliced carrots, broccoli, cheddar cheese, cream of broccoli cheddar soup, and of course, stuffing.
Also made pizza and rice pilaf. It ended up being more food than we needed, so it was good I didn't make more. I can't wait for our next visit, probably in July, to try out the rest of these recipes.
