Something I've developed over the years. I've met some that thought it was too hot, but never met anyone that didn't love it.
1 pound Cubed steak ( I use sirloin)
1 pound ground meat (I prefer venison or bison, but lean ground beef will work)
1 14 oz can diced tomatoes
1 14 oz can black beans
1 cup water
1 teaspoon flour
1/4 cup red hot chili pepper, dried and ground
2 garlic cloves finely chopped
1 1/4 teaspoons dried oregano
1 tablespoon basil
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 1/4 teaspoons salt
1 tsp cayenne pepper
2 sticks of cinnamon
2 habanero peppers finely chopped
1/2 cup cilantro chopped
1/2 cup Jack Daniels
Directions
Throw in the meat. All of it. Break up any lumps with a fork and cook, stirring occasionally, until the meat is mostly browned but some pink spots still remain
Add the tomatos with juice, ground chile, garlic, oregano, paprika, 1 teaspoon of the cumin, 2 cinnamon sticks, water, and the salt.
Stir to blend.
Bring to a boil, then lower the heat and simmer, uncovered, for 1 hour. Stir occasionally.
Taste and adjust seasonings, adding the cayenne pepper, beans, and 1 teaspoon of flour. Remove cinnamon sticks.
Simmer, uncovered, 1 hour longer.
Stir in 1/2 teaspoon of the cumin, add Jack Daniels.
Simmer, uncovered, 1/2 hour longer.
Add cilantro and habanero to the mix.
Simmer, uncovered, 1/4 hour longer.
Serve garnished with red onion.
