View Full Version : Breakfast Burritos (EE Style)

this recipe makes quite a bit and can easily be altered to include other vegies.

here it is

1 tablespoon of Chili powder
1 teaspoon of salt (I use sea salt)
1 teaspoon of oregano
1 tablespoon of minced garlic (add more if you like)
1 tablespoon White Vinegar (2 tablespoons optional or if you marinate the meat ahead of time)
6 Large eggs.
about 1 cup of shredded cheese.

now for the meat and vegies...

you can use a lot of stuff. you can use potatoes :drool:, onions, peppers, etc. really you can use just about whatever you like. the same goes for the meat.

stir together the chili powder, salt, oregano, garlic and vinegar (if using ground meat, marinate it in this mixture overnight but use 2 tablespoons of vinegar instead of 1).

cook your meat in a large skillet. after meat is cooked through, add the vegies and ad one tablespoon of the chili mixture to the vegies and meat. if you used ground meat there is no need to.

while this is cooking the vegies will become a little soft. in the mean time, add 1/2 teaspoon of the chili mixture to the eggs and then ad the eggs to the meat and vegies.

when the eggs are about done, stir in shredded cheese until melted.

for those that don't like the taste the vinegar imparts, you can also use water. I usually use ground pork and the vinegar helps the pork absorb the flavors.

I used this recipe this morning using Italian sausage.

I didn't bother to marinate the meat and I didn't have any flat bread so I used whole wheat toast.

Um...I guess that makes it plain old scrambled eggs on toast.
