View Full Version : ideas for boring ass boneless chicken breasts

Other than the ultra-lazy SHAKE N BAKE, what kind of ways do you cook boneless chicken breast in the oven when you are feeling lazy?

I made garlic chicken last night (one pound of chicken):

Combine 1/2 cup bread crumbs and 1/2 cup parmesan and mix well.

Add two cloves of minced garlic to 1/4 cup olive oil. Heat oil and garlic mix until just warm (30 seconds in the microwave will do it).

For each piece of chicken, dip it into olive oil to coat, then dip it into bread crumb mixture to coat. Put chicken in baking dish and cook at 400 degrees for 40 minutes. That may be a little long, but I like my chicken cooked, god dammit.

Eat.


I cooked some jasmine rice in the rice cooker to go with it.

I don't do butter, hence the use of olive oil. And I use a shitload of garlic, but I was being conservative when I posted this. ;)

My wife makes a pretty good Thai peanut chicken with salsa, peanut butter, evaporated milk, pineapple and cashews (yes, really). I don't have the proportions etc. on hand but I can get them for you if you'd like.

I don't care for olive oil much. I'll normally use flax seed, peanut, vegetable or canola when I'm cooking.

First I'd say stop buying boneless chicken breast but you're probably afraid you'd have a heart attack half way through dinner if you just roasted a whole chicken.

Anyway...

2 tasteless, boring chicken breast sliced.
1 onion diced.
2/3 cloves of garlic minced or chopped.
1 green (bell) pepper sliced.
8-10 mushrooms sliced.
1 large can tomatoes.
Dash of red or white wine.
oregano.
S&P.
Olive oil.

Pour olive oil in a skillet and pre heat to med high. Season chicken breast with S&P. Quickly brown chicken and remove from pan. Add onions, peppers,mushrooms and garlic. Sautee for 5 min. and add a dash of wine. Cook for a further 2 min. Break up the tomatoes and add them to the pan with oregano and S&P to taste. Bring to a simmer and add chicken. Cover and simmer on low for 30 min. Serve over rice or pasta with a green salad.

You can pick up any variety of curry pastes at the grocery store these days.

Try a red thai curry with coconut milk sometime. Very simple to prepare.

I eat a lot of chicken breast, so I love this thread!

I eat a lot of stuff a lot of people might consider pretty bland. I have a George Foreman grill. My favorite 5-minute meal:

Steamed brown rice, grilled chicken marinated in lemon juice and lemon pepper

Chicken baked with Italian dressing in a glass baking pan. Serve with white rice and whatever vegetables.

I buy the boneless breast because it's virtually fat free and packs a ton of protein with few calories. The bone-in, with-skin chicken certainly tastes a hell of a lot better though.

Boneless breast is good for kabobbin', too.

Make an artichoke lemon "pesto" (called such because it's made right in the blender like a regular pesto) to marinate and then bake the chicken in. i don't know about ingredient measurements because I always guess and throw things together but use artichoke hearts, fresh lemon juice (squeeze it yourself, it makes a huge different from the stuff in the bottle), olive oil, thyme, garlic, salt, black pepper, red pepper (and anything else you think might be tasty to add to this dish), marinate for a couple of hours, bake it right in the sauce and cover it with foil so it stays extra juicy. This is really good served with garlic sauteed asparagus and wild rice.
