Okay, I need to make something for a Super Bowl Party, any ideas of something unique? Appetizer type, I'm thinking finger foods. I want to make it, don't want to buy it!

Appetizer type, I'm thinking finger foods. I want to make it, don't want to buy it! Saison 01-23-2008, 12:51 PM I keep some recipes hanging around that I want to try out next time I entertain. I saw this one on Real Simple's website: Chicken Pot Pie Empanadas: 1 tbsp unsalted butter 1/2 yellow onion, diced 1 tbsp flour 3/4 cup low sodium chicken broth 1 10 oz box frozen peas & carrots 1 3 to 4 pound store bought rotisserie chicken (meat shredded) 1/4 tsp kosher salt 1/4 tsp black pepper 2 refridgerated 9-inche pie crusts (from a 15-oz pkg, such as Pilsbury) Heat oven to 400 degrees. Melt butter in saucepan over medium heat. Add onion and cook for 3 minutes. Add flour and cook, stirring constantly for 1 minut. Still stirring, slowly add broth. Cook until thickened, about 3 minutes. Add peas & carrots, chicken, salt, & pepper. Remove from heat Cut each piecrust in half to form 4 half circles. Spoon mixture over the bottom half of each circle, leaving a 1/2 inch border. Using your fingers, wet the border with water. Fold the top of each crust over the chicken to form a quarter circle. Press to seal. Make three 1-inch slits in each top crust. Transfer to baking sheet. Bake until golden 15 - 18 minutes. Makes four servings. I bet you could play around with ingredients on this and come up with some interesting variations if you don't think pot pies are very "super bowl" oriented. :) colonel 01-24-2008, 06:22 PM When I do this kind of party I pick a dish associated with the region of each team.
