Saison 01-22-2008, 02:51 PM So, after another disappointing trip to the cafeteria, my coworkers and I decided to do something different. Each of us will pick a day of the week and bring a meal for the group. So, I need recipes. I'd like to keep it relatively cheap, healthy and something that can be warmed up in the microwave or crock pot. Any suggestions? (P.S. if you're suggesting something, please include your recipe.) (I'm hoping for Colonel to post here, cuz his recipes never lead me astray. :nice: )

I've done every job there is to do in the restaurant biz including head of the line but I don't have chef papers.

colonel 01-23-2008, 10:21 AM Well it's winter so lets start with beef stew. (feeds 6)
3lbs blade steak or stewing beef.
1 large onion diced.
2 cloves minced garlic.
2/3 celery stalks chopped
3 large carrots diced or sliced.
Sliced mushrooms (optional).
3 potatoes chopped (optional).
1 8oz can tomatoes.
1 bottle of dark beer (the sweeter the better).
1 tblsp mustard (I use dijon)
1 tsp. oregano.
1 tsp thyme.
1/2 bay leaves.
S & P.
If you're making this for yourself take the time to pat the meat dry with a paper towel, season with S & P and sear it in a skillet with oil on med high to caramelize the outside. Do it in batches so the meat is not all crowded together. When all the meat has been seared deglaze the skillet with beer or red wine or sherry and add this liquid to the stew.
In a large pot sweat (saute) the onions and garlic. Add the celery and carrots and cook a further 2/3 min. Add the rest of the ingredients and simmer on low for 2 hours. If you don't use potato in the stew it can be served on rice, egg noodles or any starch of your choice. Fresh, crusty french bread is good too.
If you're using a crock pot and taking it to work just toss all the ingredients in, turn on the crock and go to bed. It'll still taste great.
If you use a bitter beer like stout you'll need to add honey or sugar to take the edge off.

I don't know if I can get Jellyfish down here. It's hard enough to get decent tuna. :)

The only problem with lunch groups is it's hard to please everyone and there's always one slacker who brings in PBJ on wonderbread. :mad:

Yeah, but they know about my peanut allergy and at least opt for lunch meat. It's better than the garbage they serve in the "cafeteria."

Saison 02-15-2008, 11:13 AM Well, it's a mixed bag, so far. I made a casserole with a recipe I got off the box of Stove Top with rotisserie chicken, broccoli, cheddar cheese and cream of mushroom soup. It was a huge hit. It's my turn again on monday. Some of the other ladies just brought in bagged salad and stuff. I'm hoping we can keep up with it because I hate eating in the cafeteria.
