We have a complete wheel of excellent Dutch cheese, having already broken the external wax by giving wedges to friends what's the best way to preserve it (it's currently clingfilm covered in the fridge).
Can we freeze it in smaller bits?

You can freeze just about anything but the quality is usually affected to some degree.
Your best bet would be to vac. seal it. You can pick up a home model in any hardware store and they're great for preserving and freezing all kinds of food.

My rule of thumb is not to freeze anything I wouldn't be okay with losing. Perhaps finding more cheese wax and covering the smaller pieces? Or, if you have the contact info of the manufacturer, shoot them an email for advice.

Heh! Manufacturer? This came direct from a farm in the Brabant countryside (and it's deliciously creamy with a tangy aftertaste!!)
I'll look into the vac sealing - although I suspect we will pig out on most of it!
