OK, I mentioned this before, and someone asked me to post it, so I will. My apologies for the approximate measurements; this just sort of grew as we went along, so I've never actually gone through it with measuring cup in hand.
One pound of pasta (I used elbows and/or rotini)
One pound of shelled, cooked shrimp, cut up, OR
Two cans of white albacore tuna in water (if you're lazy/cheap/in a hurry)
One cup of frozen peas
One cup of cashew halves or bits
One cup of apple or pear (I prefer pear), cut up
Enough mayo (half a cup or so?) to coat everything
Cook the pasta as you normally would, with the peas. Drain. Throw in everything else and mix. I know the combination sounds weird, but the flavors and textures really do "play off each other" (as my wife would say) and this has been a big hit at potlucks etc.
